Ingredients
- 8 oz rice noodles
- ¼ cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp chili garlic sauce
- 1 whole lime
- 1 tbsp brown sugar
- 4 oz mushrooms
- ¼ cup cilantro

Cook the 8 oz rice noodles according to package directions until tender, about 8 minutes. Drain and rinse with cold water to stop cooking.

In a small bowl, whisk together the 1/4 cup peanut butter, 2 tbsp soy sauce, 1 tbsp chili garlic sauce, juice of 1 lime, and 1 tbsp brown sugar until smooth. Add 2-3 tbsp warm water if needed to loosen.

Slice the 4 oz mushrooms and cook in a hot skillet with a little oil until browned and softened, about 5 minutes. If using meat or tofu, add it now and cook until done.

Add the cooked noodles and the peanut sauce to the skillet. Toss over medium heat until everything is coated and heated through, about 2 minutes.

Serve topped with the 1/4 cup chopped cilantro and extra lime wedges if desired.

For extra crunch, sprinkle with crushed peanuts or sesame seeds before serving.
