Ingredients

  • 8 oz thin wheat noodles (somyeon)
  • 3 tbsp gochujang (Korean chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp honey or sugar
  • 2 tsp sesame oil
  • 1 medium zucchini
  • 2 cups spinach
  • 1 tbsp toasted sesame seeds

Instructions

  1. 1

Cook the 8 oz noodles in boiling water until tender but chewy, about 5-7 minutes. Drain, rinse under cold water, and set aside.

  2. 2

In a small bowl, mix 3 tbsp gochujang, 2 tbsp soy sauce, 1 tbsp honey, and 2 tsp sesame oil until smooth. Set aside.

  3. 3

Slice the 1 zucchini into thin matchsticks. Blanch in boiling water for 1 minute, then shock in ice water. Drain well.

  4. 4

Wilt the 2 cups spinach in a hot skillet for 1-2 minutes until just softened. Squeeze out excess water.

  5. 5

Toss the noodles with the sauce, zucchini, and spinach until evenly coated. Taste and add more honey or soy if needed.

  6. 6

Divide into bowls and sprinkle with the 1 tbsp sesame seeds. Serve cold or at room temperature.
