Ingredients

  • 1 lb pork shoulder or sirloin, thinly sliced
  • 2 tbsp fish sauce
  • 2 stalks lemongrass, minced (or 1 tbsp jarred)
  • 1 tbsp honey
  • 1 small head lettuce leaves
  • 1 whole cucumber, sliced
  • ½ cup fish sauce, lime juice, water, sugar, garlic, and chili combined (or use store-bought Vietnamese dipping sauce)

Instructions

    Toss pork slices with fish sauce, lemongrass, and honey until well coated. Let sit for 5 minutes.

    Heat a grill pan or cast iron skillet over medium-high heat until it shimmers, about 90 seconds.

    Working in batches, grill pork slices 60-90 seconds per side without stirring—edges should caramelize and char.

    Arrange lettuce leaves and cucumber slices on a serving plate. Top with grilled pork.
