Ingredients
- 2 lbs pork liempo (belly), skin-on
- ½ cup soy sauce
- ¼ cup white vinegar
- 3 tbsp brown sugar
- 6 cloves garlic, minced
- ½ tsp black pepper
- 3 whole bay leaves
- 3 whole scallions, sliced

Whisk soy sauce, vinegar, brown sugar, garlic, black pepper, and bay leaves in a small bowl until sugar dissolves.

Pat pork liempo dry with paper towels. Cut into 1.5-inch-thick steaks. Season both sides generously with salt.

Heat a large cast iron skillet over medium-high until smoking, ~2 minutes. Working in batches, sear pork 3 minutes per side without moving — edges should char dark brown.

Pour glaze over all pork steaks. Reduce heat to medium and simmer 5 minutes, turning steaks halfway through.

Transfer pork to a serving platter. Pour glaze over the top and scatter sliced scallions across.

Serve immediately with steamed white rice and pickled vegetables on the side.
