Ingredients

  • 2 cups cooked rice
  • 1.5 cups frozen mixed vegetables
  • 2 large egg
  • 2 tbsp soy sauce

Instructions

    Heat 1 tbsp oil in a large skillet over high heat until shimmering, about 1 minute.

    Add frozen vegetables and cook without stirring for 2 minutes until edges start to caramelize.

    Push vegetables to the side, crack eggs into the pan, and scramble with a spatula until cooked through, ~2 minutes.
