Ingredients
- ½ lb ground beef
- 4 count corn tortillas
- 1 cup shredded cheese (Oaxaca, mozzarella, or Chihuahua)
- ¼ count white onion, diced
- 2 tbsp fresh cilantro, chopped
- 1 count lime (halved)

Heat a 10-inch skillet over medium-high heat. Add ground beef, breaking it up with a spoon as it cooks, until no pink remains, ~5 minutes.

Stir in diced onion and cook 1 minute until fragrant. Season with salt and pepper. Transfer to a plate.

Reduce heat to medium. Place a tortilla in the skillet and sprinkle 2 tbsp cheese directly on top.

Spoon 2 tbsp cooked beef onto the cheese, then fold the tortilla in half. Cook without moving until the bottom is crispy and golden, ~2 minutes.

Flip and cook the other side until cheese shows at the edges and tortilla is crispy, ~90 seconds.

Transfer to a plate. Repeat with remaining tortillas, cheese, and beef.

Top with cilantro and serve immediately with lime wedges for squeezing.
