Ingredients
- 2 tablespoons butter
- 4 slices bread slices (white, sourdough, or rye)
- 4 slices deli ham slices
- 2 slices cheese (cheddar, gouda, or emmental), sliced
- 4 whole eggs
- 1 pinch salt and pepper to taste

Place a large skillet over medium heat and wait 1 minute until the pan is evenly warm.

Add 1 tablespoon butter to the pan, swirling it around to coat the entire bottom.

Lay all 4 bread slices flat in the pan and cook without moving them for 2 to 3 minutes until the bottoms turn deep golden brown, like caramel.

Transfer the toasted bread to a plate.

Lay the 4 toast slices on a clean plate or cutting board, toasted side up.

Top each slice with one slice of ham and one slice of cheese, placing them in the center of the toast.

Place the skillet back over medium-high heat and add the remaining 1 tablespoon butter, swirling until it foams and the foam subsides slightly, about 30 seconds.

Crack all 4 eggs into the pan at once, spacing them evenly so they do not touch each other.

Cook the eggs without moving them for 3 to 4 minutes until the whites are set and opaque but the yolks still jiggle slightly when you gently shake the pan.

Using a spatula, slide one fried egg onto each slice of ham-and-cheese toast, centering the yolk in the middle.
