Crispy Halloumi & Egg Skillet with Tomatoes

Ingredients

  • ½ block (about 4 oz) halloumi cheese
  • 1.5 cups cherry tomatoes
  • 2 cups fresh spinach
  • 4 large eggs
  • 3 tbsp olive oil
  • 2 cloves garlic, minced

Instructions

    Slice halloumi into 1/4-inch-thick planks. Heat 1 tbsp olive oil in a 12-inch skillet over medium-high until shimmering.

    Sear halloumi 90 seconds per side until golden. Transfer to a plate.

    Add remaining 2 tbsp oil to the skillet. Stir in garlic, then add tomatoes and spinach, cooking until spinach wilts, ~2 minutes.

    Make 4 small wells in the vegetable mixture. Crack an egg into each, season with salt and pepper, cover, and cook until whites set, 3–4 minutes.

    Top with crispy halloumi and serve directly from the skillet.
