Ingredients
- ½ block (about 4 oz) halloumi cheese
- 1.5 cups cherry tomatoes
- 2 cups fresh spinach
- 4 large eggs
- 3 tbsp olive oil
- 2 cloves garlic, minced

Slice halloumi into 1/4-inch-thick planks. Heat 1 tbsp olive oil in a 12-inch skillet over medium-high until shimmering.

Sear halloumi 90 seconds per side until golden. Transfer to a plate.

Add remaining 2 tbsp oil to the skillet. Stir in garlic, then add tomatoes and spinach, cooking until spinach wilts, ~2 minutes.

Make 4 small wells in the vegetable mixture. Crack an egg into each, season with salt and pepper, cover, and cook until whites set, 3–4 minutes.
