Ingredients

  • 5 cups fresh spinach, roughly chopped
  • 1.25 cups Gruyère cheese, shredded
  • 8 whole eggs
  • ½ cup heavy cream
  • 1 whole shallot, minced
  • 1 tbsp fresh thyme (or 0.5 tsp dried)
  • ⅛ tsp nutmeg, freshly grated
  • 2 tbsp butter

Instructions

    Whisk eggs with cream, salt, pepper, thyme, and nutmeg in a bowl until smooth.

    Melt butter in a 10-inch nonstick skillet over medium-high heat until foaming.

    Add shallot and sauté 60 seconds until fragrant, then add spinach in batches, stirring until wilted, ~2 minutes total.

    Scatter Gruyère over the spinach, then pour egg mixture evenly across the skillet.

    Cook over medium heat without stirring until edges set but center still jiggles slightly, 5–7 minutes.

    Slide onto a plate, cut into wedges, and serve immediately while the center is still creamy.
