Ingredients
- 5 cups fresh spinach, roughly chopped
- 1.25 cups Gruyère cheese, shredded
- 8 whole eggs
- ½ cup heavy cream
- 1 whole shallot, minced
- 1 tbsp fresh thyme (or 0.5 tsp dried)
- ⅛ tsp nutmeg, freshly grated
- 2 tbsp butter

Whisk eggs with cream, salt, pepper, thyme, and nutmeg in a bowl until smooth.

Melt butter in a 10-inch nonstick skillet over medium-high heat until foaming.

Add shallot and sauté 60 seconds until fragrant, then add spinach in batches, stirring until wilted, ~2 minutes total.
