  • 2 cans (15 oz each) canned white beans (cannellini or navy), drained and rinsed
  • ½ medium red onion, thinly sliced
  • ⅓ cup fresh parsley, chopped
  • 1 whole lemon (juiced)
  • 3 tbsp olive oil
  • 1 pinch salt and black pepper to taste
