  • 1.5 cups boiling water
  • 1 cup fresh parsley, finely chopped
  • ¾ cup pomegranate seeds
  • ⅓ cup red onion, minced
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 8 leaves lettuce leaves
  • 1 whole lemon wedges
