Ingredients

  • ½ lb ground lamb
  • ¼ medium, finely minced yellow onion
  • 1 tsp combined (or 1 tsp Turkish spice blend) cumin, paprika, and black pepper
  • ½ lb frozen french fries
  • 1 cup prepared cooked white rice
  • 1 whole green bell pepper
  • 2 whole Roma tomato

Instructions

  1. 1

Start the fries in a skillet over medium-high heat with 2 tbsp oil, stirring occasionally until golden, ~12 minutes. Season with salt.

  2. 2

While fries cook, mix ground lamb with minced onion, cumin, paprika, pepper, and a pinch of salt. Form into 4 oval patties.

  3. 3

Heat 1 tbsp oil in a second skillet over medium-high until shimmering. Sear lamb patties 3 minutes per side until charred outside, interior stays pink.

  4. 4

In the same skillet as the lamb, add halved pepper and tomato halves cut-side down. Sear 2 minutes per side until blistered and caramelized.

  5. 5

Warm the rice in a microwave or small pot, ~2 minutes. Plate rice, top with kofte, and surround with grilled vegetables and fries.
