Ingredients

  • ¾ lb ground lamb
  • 1 tbsp urfa chili flakes (or Aleppo pepper)
  • ½ tsp cumin
  • 1 lb potatoes, cut into thin fries
  • 1 lb bell peppers and tomatoes, halved for grilling
  • ½ medium red onion, thinly sliced
  • 2 cups red cabbage, thinly sliced and quick-pickled (2 tbsp red vinegar + pinch salt)
  • 2 pieces flatbread, warmed

Instructions

    Toss potatoes with 2 tbsp oil, salt, and pepper. Spread on a sheet pan and roast at 425°F for 20 minutes until golden and crispy.

    Mix ground lamb with urfa chili, cumin, 0.5 tsp salt, and pepper. Form into 2 oval patties about 0.75 inches thick.

    Heat 2 tbsp oil in a large skillet over medium-high. Sear lamb patties 4 minutes per side without moving—edges should char.

    In the same skillet, char peppers and tomatoes cut-side down for 3 minutes until blistered, working in batches if needed.

    Quick-pickle red cabbage: toss with 2 tbsp red vinegar and a pinch of salt in a small bowl. Let sit 2 minutes.
