Ingredients
- ¾ lb ground beef
- 3 tbsp tahini
- 1 whole (juiced) lemon
- 1.5 tsp cumin
- 1 tsp paprika
- 10 oz frozen french fries
- 2 cups (chopped) romaine lettuce
- 1 large (sliced) tomato

Start fries in the oven per package directions; they'll finish while you cook the kebab.

Combine ground beef, cumin, paprika, 0.5 tsp salt, and pinch of pepper in a bowl.

Divide mixture into 4 portions and mold onto skewers, pressing firmly into long ovals.

Heat 1 tbsp oil in a heavy skillet over medium-high until smoking, about 90 seconds.

Sear kebabs without moving until deeply charred, 3 minutes per side. They should look dark and caramelized.

Whisk tahini with lemon juice and 2 tbsp water until creamy and pourable. Season with salt to taste.

Arrange fries on a plate, top with kebabs, add lettuce and tomato on the side, and drizzle tahini sauce.
