Ingredients

  • 1.5 cups all-purpose flour
  • 10 oz ground beef
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • 2 tbsp tomato paste
  • 1 cup plain yogurt (for ayran)
  • 2 cups fresh salad greens (arugula or mixed)
  • 1 whole lemon

Instructions

  1. 1

Mix flour with 0.5 cup warm water and a pinch of salt until a soft dough forms. Knead 2 minutes, cover, let rest while you prep the meat.

  2. 2

Brown ground beef in a skillet over medium-high heat, breaking it up with a spoon, about 4 minutes. Drain excess fat if needed.

  3. 3

Add garlic and red pepper flakes, cook 30 seconds until fragrant. Stir in tomato paste and 2 tablespoons water, simmer 2 minutes. Season with salt and pepper.

  4. 4

Divide dough in half. Roll each into a thin oval about 6 inches long on a floured surface. Place on a greased baking sheet.

  5. 5

Spread beef mixture evenly over each dough oval. Bake at 475°F for 6–8 minutes until crust is golden and crispy at the edges.

  6. 6

Whisk yogurt with 0.5 cup cold water and a pinch of salt to make ayran. Serve lahmacun with ayran, fresh salad, and lemon wedges.
