Ingredients
- 1.5 cups all-purpose flour
- 10 oz ground beef
- 3 cloves garlic, minced
- ½ tsp red pepper flakes
- 2 tbsp tomato paste
- 1 cup plain yogurt (for ayran)
- 2 cups fresh salad greens (arugula or mixed)
- 1 whole lemon

Mix flour with 0.5 cup warm water and a pinch of salt until a soft dough forms. Knead 2 minutes, cover, let rest while you prep the meat.

Brown ground beef in a skillet over medium-high heat, breaking it up with a spoon, about 4 minutes. Drain excess fat if needed.

Add garlic and red pepper flakes, cook 30 seconds until fragrant. Stir in tomato paste and 2 tablespoons water, simmer 2 minutes. Season with salt and pepper.

Divide dough in half. Roll each into a thin oval about 6 inches long on a floured surface. Place on a greased baking sheet.
