Ingredients
- 2 cups feta cheese, crumbled
- 1 cup ricotta cheese
- ½ cup fresh parsley, finely chopped
- ¼ cup fresh dill, finely chopped
- 2 whole eggs
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- 1 pound phyllo pastry sheets
- ¾ cup butter, melted
- 2 tablespoons sesame seeds

Preheat oven to 350°F (175°C).

In a large bowl, combine feta cheese, ricotta, parsley, dill, eggs, black pepper, and salt. Mix until well combined.

Brush a 9x13-inch baking sheet with melted butter.

Place one phyllo sheet on the prepared pan and brush lightly with melted butter. Repeat with 3-4 more sheets, brushing each layer.

Spread half of the cheese filling evenly over the phyllo layers.

Layer 3-4 more phyllo sheets on top, brushing each with butter.

Spread remaining filling over the phyllo.

Top with remaining phyllo sheets, brushing each with butter. Brush the top layer generously with butter.

Using a sharp knife, cut the borek into 8 squares or diamond shapes. Sprinkle sesame seeds over the top.
