Ingredients
- 12 cups phyllo dough cups (pre-made, 12-cup package)
- 4 cups fresh spinach
- 2 cloves garlic cloves, minced
- ¾ cup feta cheese, crumbled
- ¼ cup red onion, finely diced
- ⅓ cup pine nuts, toasted
- ½ lemon lemon (juiced)
- 2 tbsp olive oil
- 1 pinch salt and black pepper to taste

Preheat oven to 375°F. Place phyllo cups on a rimmed baking sheet.

Heat olive oil in a large skillet over medium. Add garlic and cook until fragrant, ~30 seconds.

Remove skillet from heat. Stir in feta, red onion, pine nuts, and lemon juice. Season with salt and pepper.
