Ingredients

  • 12 cups phyllo dough cups (pre-made, 12-cup package)
  • 4 cups fresh spinach
  • 2 cloves garlic cloves, minced
  • ¾ cup feta cheese, crumbled
  • ¼ cup red onion, finely diced
  • ⅓ cup pine nuts, toasted
  • ½ lemon lemon (juiced)
  • 2 tbsp olive oil
  • 1 pinch salt and black pepper to taste

Instructions

    Preheat oven to 375°F. Place phyllo cups on a rimmed baking sheet.

    Heat olive oil in a large skillet over medium. Add garlic and cook until fragrant, ~30 seconds.

    Add spinach in batches and stir until wilted and any liquid evaporates, ~3 minutes total.

    Remove skillet from heat. Stir in feta, red onion, pine nuts, and lemon juice. Season with salt and pepper.

    Spoon filling evenly into each phyllo cup, mounding gently. Don't overfill.

    Bake until cups are golden and crisp, ~8 minutes. Watch after 6 minutes to avoid over-browning.
