Ingredients
- 2 large green plantains
- 1 cup vegetable oil
- 1 teaspoon salt
- ½ cup water

Peel the 2 plantains by cutting off the ends and scoring the skin lengthwise, then remove the peel. Slice into 1-inch thick rounds.

Heat the 1 cup vegetable oil in a heavy skillet over medium-high until shimmering, about 3 minutes. Test with a plantain piece—it should sizzle immediately.

Fry the plantain rounds in batches without crowding, turning once, until pale golden and tender, about 3-4 minutes per side. Remove with a slotted spoon.

Dip the 0.5 cup water in a bowl. Flatten each fried round using a tostonera or the bottom of a heavy glass, dipping the press in water to prevent sticking.

Return the flattened plantains to the hot oil and fry again until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

Sprinkle the 1 teaspoon salt over the hot tostones and serve immediately with your favorite dipping sauce.
