Tortilla Fold Pizza

A crispy-edged skillet pizza made in a flour tortilla, ready in 10 minutes. Top it however you like — cheese, sauce, pepperoni, or whatever's in your fridge.

Ingredients

  • 1 piece flour tortilla (8-inch)
  • 1 tbsp olive oil
  • 3 tbsp marinara sauce or pizza sauce
  • ¾ cup shredded mozzarella cheese
  • 1 pinch salt and pepper to taste

Instructions

    Heat oil in a 10-inch skillet over medium-high until it shimmers, about 90 seconds.

    Place tortilla in the skillet. Cook 90 seconds until the bottom is lightly golden and crisp.

    Flip tortilla. Immediately spread sauce on the cooked side, leaving a 1/2-inch border.

    Sprinkle cheese evenly over the sauce. Season with salt and pepper.

    Cook 2–3 minutes until cheese melts and the bottom edges turn golden and crisp.

    Slide onto a cutting board. Fold in half or quarter, then serve immediately.
