Ingredients
- 4 count flour tortillas (8-inch)
- 1.5 cups shredded cheese (cheddar, Oaxaca, or Monterey Jack)
- 1 tbsp butter
- 1 pinch salt and pepper to taste

Heat a 10-inch skillet over medium-high heat until a drop of water sizzles on contact, ~90 seconds.

Rub one side of a tortilla with half the butter, then place butter-side down in the skillet.

Sprinkle 1/3 cup cheese evenly over the tortilla, then top with a second tortilla.

Rub the top tortilla with remaining butter, then press gently with a spatula.

Cook 2–3 minutes without moving until the bottom is golden and crispy.

Flip and cook the other side 2 minutes until golden and cheese melts completely.

Transfer to a cutting board and repeat with remaining tortillas and cheese.
