Ingredients

  • 1 lb pork ribs (about 1 lb), cut into 2-inch pieces
  • 4 cups water
  • 4 whole Thai bird chilies (or 2 serrano chilies), sliced
  • 1 whole lime (juiced)
  • 2 tbsp fish sauce
  • ¼ cup fresh mint and cilantro leaves (chopped, mixed)

Instructions

    Bring water to a boil in a large pot over high heat, then add pork ribs.

    Once boiling, reduce heat to medium-low and simmer 12–15 minutes until pork is tender and broth is clear.

    Add sliced chilies, fish sauce, and lime juice. Stir and taste; adjust salt or lime as needed.
