Ingredients

  • 1 lb morning glory (water spinach), trimmed
  • 4 cloves garlic cloves, minced
  • 1 chili Thai red chili, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp vegetable oil

Instructions

    Heat oil in a wok or 12-inch skillet over high heat until it shimmers, about 1 minute.

    Add garlic and chili. Stir constantly for 30 seconds until fragrant.

    Add morning glory in batches, tossing with tongs until mostly wilted, 3–4 minutes.

    Pour soy sauce and fish sauce over the greens. Toss for 1 minute until coated and glossy.

    Slide onto a plate and serve immediately while still hot.
