Thai Garlic Butter Prawns

Ingredients
- ¾ lb large prawns, peeled and deveined
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 whole or 0.25 tsp flakes Thai bird's eye chili (or red chili flakes)
- 1 whole lime
- 2 tbsp fresh cilantro, chopped

Pat prawns dry with paper towels. Season generously with salt and black pepper.

Heat butter in a large skillet over medium-high until it foams, about 60 seconds.

Add garlic and chili. Stir for 30 seconds until fragrant — do not let garlic brown.

Add prawns and sear without moving for 90 seconds. Flip once and cook 60–90 seconds until pink and cooked through.

Squeeze lime juice over the prawns. Toss to coat, then transfer to a plate.

Garnish with fresh cilantro. Serve immediately with the pan sauce spooned over.
