Ingredients

  • 1 lb large prawns, peeled and deveined
  • 6 cloves garlic, minced
  • 3 tbsp butter
  • 2 whole red chilies, sliced (or 0.5 tsp chili flakes)
  • 1 whole lime, halved
  • 1 tbsp fish sauce
  • ¼ cup fresh cilantro, chopped

Instructions

  1. 1

Pat prawns dry with paper towels. Season with salt and black pepper.

  2. 2

Heat butter in a 12-inch skillet over medium-high until it foams, about 60 seconds.

  3. 3

Add garlic and chilies; cook 30 seconds until fragrant, stirring constantly.

  4. 4

Add prawns and sear 90 seconds per side without moving—edges should turn opaque.

  5. 5

Pour fish sauce over, squeeze lime juice, toss gently for 20 seconds until glazed.

  6. 6

Garnish with cilantro and serve immediately with lime wedges on the side.
