Ingredients
- 3 cups cooked rice
- ½ pound pork (thinly sliced)
- 2 large eggs
- 1 medium bell pepper (sliced)
- 1 medium onion (sliced)
- 3 tablespoons soy sauce

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the 1 sliced onion and 1 sliced bell pepper, stir-fry until slightly softened, about 2 minutes.

Push vegetables to one side. Add the 0.5 lb sliced pork and cook, stirring, until no longer pink, about 3 minutes. Season with a pinch of salt and pepper.

Push pork and vegetables to the side. Crack the 2 eggs into the empty space, scramble until just set, about 1 minute.

Add the 3 cups cooked rice and 3 tbsp soy sauce. Toss everything together, breaking up clumps, until rice is hot and evenly coated, about 3 minutes.
