Ingredients
- 8 oz wide rice noodles
- ½ lb beef sirloin, thinly sliced
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 1 cup bean sprouts
- 2 green onions, sliced

Cook the 8 oz rice noodles according to package directions until just tender, about 8 minutes. Drain and set aside.

In a small bowl, mix 3 tbsp soy sauce with 2 tbsp water. Set aside.

Heat 1 tbsp vegetable oil in a large skillet over high heat. Add the 0.5 lb beef and stir-fry until browned, about 3 minutes. Remove beef from skillet.

Add remaining 1 tbsp oil to the skillet. Add the cooked noodles and the soy sauce mixture. Toss until noodles are coated and slightly charred, about 2 minutes.

Return beef to the skillet. Add 1 cup bean sprouts and 2 sliced green onions. Stir-fry for 1 minute until sprouts are just wilted. Serve hot with lime wedges and chili flakes if desired.
