Ingredients

  • 1 cup all-purpose flour
  • 1 cup ice-cold water
  • 1 large egg
  • 2 cups assorted vegetables (e.g., bell pepper, zucchini, onion)
  • 2 cups vegetable oil
  • ½ teaspoon salt

Instructions

    In a bowl, whisk the 1 egg and 1 cup ice-cold water until combined. Add the 1 cup flour and 0.5 tsp salt; stir just until barely mixed—lumps are fine, do not overmix.

    Heat the 2 cups vegetable oil in a deep pot over medium-high until a drop of batter sizzles immediately, about 5 minutes.

    Dip the 2 cups vegetables into the batter, letting excess drip off. Carefully place a few pieces into the hot oil without crowding the pan.
