Ingredients
- 1.5 lbs beef cheek, cooked and shredded
- 1 large white onion
- 8 count corn tortillas (6-inch)
- 2 tbsp olive oil
- ¼ cup fresh cilantro, chopped
- 1 count lime (halved)

Slice onion into thin half-moons. Heat oil in a large skillet over medium-high.

Add onion, cook 6–8 minutes, stirring occasionally, until edges caramelize and char lightly.

Add shredded beef, stir to combine, heat through until warmed, about 2 minutes.

Warm tortillas in a dry skillet or directly over flame for 20 seconds per side until pliable.
