Ingredients
- 1.5 lbs store-bought barbacoa or shredded beef
- 1 whole small yellow onion, sliced thin
- 1 whole lime
- ¼ cup fresh cilantro, chopped
- 8 whole corn or flour tortillas
- ½ cup white onion, diced fine
- 1 whole jalapeño, sliced (optional)
- 1 tbsp olive oil
- 1 to taste salt and black pepper

Heat olive oil in a large skillet over medium. Add sliced onion and cook until edges soften, ~3 minutes.

Add barbacoa and stir gently to warm through, ~5 minutes. Don't break up the meat too much.

Squeeze lime over the beef and season with salt and pepper. Taste and adjust.

Warm tortillas in a dry skillet 20 seconds per side, or over a gas flame until pliable.

Fill each tortilla with barbacoa, diced onion, cilantro, and jalapeño if using.

Serve immediately with lime wedges on the side.
