Ingredients

  • 1.5 lbs store-bought barbacoa or shredded beef
  • 1 whole small yellow onion, sliced thin
  • 1 whole lime
  • ¼ cup fresh cilantro, chopped
  • 8 whole corn or flour tortillas
  • ½ cup white onion, diced fine
  • 1 whole jalapeño, sliced (optional)
  • 1 tbsp olive oil
  • 1 to taste salt and black pepper

Instructions

  1. 1

Heat olive oil in a large skillet over medium. Add sliced onion and cook until edges soften, ~3 minutes.

  2. 2

Add barbacoa and stir gently to warm through, ~5 minutes. Don't break up the meat too much.

  3. 3

Squeeze lime over the beef and season with salt and pepper. Taste and adjust.

  4. 4

Warm tortillas in a dry skillet 20 seconds per side, or over a gas flame until pliable.

  5. 5

Fill each tortilla with barbacoa, diced onion, cilantro, and jalapeño if using.

  6. 6

Serve immediately with lime wedges on the side.
