Ingredients
- 1.5 lb beef tongue, cooked and peeled
- 1 whole white onion
- ¼ cup, chopped fresh cilantro
- 8 pieces corn or flour tortillas
- 1 tsp cumin
- 2 cloves garlic, minced

Slice the cooked tongue into 1/4-inch-thick pieces against the grain.

Finely dice the onion. Chop the cilantro. Mince the garlic.

Heat 1 tbsp oil in a large skillet over medium-high heat until shimmering.

Add the sliced tongue, cumin, and garlic. Cook, stirring occasionally, 4–5 minutes.

Warm the tortillas directly over a gas flame or in a dry skillet, ~30 seconds per side.

Divide the tongue between tortillas. Top with diced onion and cilantro.
