Ingredients

  • 1.5 lbs cooked pulled pork
  • 1 whole lime, halved
  • 12 whole corn tortillas
  • ½ whole white onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 1 pinch salt and black pepper

Instructions

    Heat a large skillet over medium-high until hot, ~2 minutes.

    Add pulled pork, breaking into bite-sized pieces as it heats.

    Stir and crisp the pork edges until edges char slightly, 5–7 minutes.

    Squeeze lime juice over pork. Season with salt and pepper to taste.

    Warm tortillas in the skillet 20 seconds per side until pliable.

    Fill each tortilla with pork, onion, and cilantro. Serve immediately.
