Ingredients

  • 1.5 lbs pork baby back ribs
  • ⅓ cup ketchup
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 count garlic cloves, minced
  • 1 lbs russet potatoes
  • 1.5 cups vegetable chips (store-bought)
  • ¼ cup fresh cilantro, chopped

Instructions

    Pat ribs dry. Whisk ketchup, soy sauce, brown sugar, and garlic until smooth.

    Arrange ribs meat-side up on a sheet pan. Brush glaze thickly on both sides.

    Broil ribs 6 inches from heat for 12 minutes, basting with extra glaze halfway through. Edges should char and bubble.

    Meanwhile, boil potatoes in salted water until fork-tender, about 10 minutes. Drain and mash with salt and pepper.
