Ingredients

  • 1.5 lbs pork ribs (baby back or St. Louis cut), cut into 2-rib sections
  • 3 tbsp soy sauce
  • 2 tbsp dark brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp neutral oil

Instructions

  1. 1

Pat ribs dry with paper towels. Season generously with salt and pepper on both sides.

  2. 2

Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

  3. 3

Working in batches, sear ribs 2 minutes per side without moving until golden brown. Transfer to a plate.

  4. 4

Add garlic and ginger to the same skillet, cook 30 seconds until fragrant.

  5. 5

Stir in soy sauce and brown sugar until sugar dissolves. Return ribs to pan and coat generously.

  6. 6

Cook uncovered over medium-high heat for 6–8 minutes, turning ribs once, until glaze darkens and caramelizes.
