Ingredients

  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 lb sushi-grade ahi tuna, cubed
  • 2 cups sushi rice (prepared)
  • 1 medium cucumber, sliced thin
  • 1 medium avocado, sliced
  • 2 tbsp sesame seeds

Instructions

    Whisk soy sauce, ginger, vinegar, and sesame oil together in a small bowl.

    Add cubed tuna to the marinade and toss gently to coat evenly.

    Let sit for 5–10 minutes while you prep the other components.

    Divide sushi rice between two bowls, pressing lightly to form a base.

    Arrange marinated tuna in the center of each bowl.

    Place cucumber and avocado slices around the tuna.

    Drizzle with remaining marinade and sprinkle sesame seeds on top.
