Ingredients
- 1 lb boneless, skinless chicken thighs
- 3 tbsp soy sauce
- 2 tbsp mirin (or brown sugar + water)
- 1 tbsp butter
- 2 stalks scallions, chopped
- 1 tsp sesame seeds

Cut chicken thighs into 1.5-inch chunks and thread onto skewers (or just use chunks in the pan).

Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

Add chicken and sear without moving for 3 minutes until edges char and turn golden.

Flip chicken and cook another 2 minutes until cooked through and sizzling on all sides.
