Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp mirin (or brown sugar + water)
  • 1 tbsp butter
  • 2 stalks scallions, chopped
  • 1 tsp sesame seeds

Instructions

    Cut chicken thighs into 1.5-inch chunks and thread onto skewers (or just use chunks in the pan).

    Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add chicken and sear without moving for 3 minutes until edges char and turn golden.

    Flip chicken and cook another 2 minutes until cooked through and sizzling on all sides.

    Pour soy sauce and mirin into the pan, swirl to coat. Add butter and toss everything until glossy, ~60 seconds.

    Slide onto a plate, sprinkle with scallions and sesame seeds, and serve hot.
