Ingredients

  • 1 lb boneless chicken thighs, cut into 1.5-inch pieces
  • 3 tbsp soy sauce
  • 2 tbsp mirin (or honey as substitute)
  • 2 cups steamed white rice
  • 1 tbsp furikake seasoning
  • 2 stalks scallions, sliced thin

Instructions

    Heat 1 tbsp neutral oil in a 12-inch skillet over medium-high heat until shimmering, about 90 seconds.

    Add chicken pieces in a single layer. Sear without moving for 4 minutes until golden brown on one side.

    Flip chicken and cook 3 more minutes. Pour in soy sauce and mirin, then stir constantly for 2 minutes until sauce coats and caramelizes.

    Divide rice between two bowls. Top each with glazed chicken and sauce from the pan.

    Sprinkle furikake over the top, then scatter sliced scallions. Serve immediately.
