Ingredients
- 1 lb boneless chicken thighs, cut into 1.5-inch pieces
- 3 tbsp soy sauce
- 2 tbsp mirin (or honey as substitute)
- 2 cups steamed white rice
- 1 tbsp furikake seasoning
- 2 stalks scallions, sliced thin

Heat 1 tbsp neutral oil in a 12-inch skillet over medium-high heat until shimmering, about 90 seconds.
