Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- ½ cup smooth peanut butter
- 3 tbsp soy sauce
- 2 tbsp lime juice (about 1 lime)
- 1 tbsp sambal oelek or sriracha
- 1 tbsp brown sugar

Cut chicken thighs into 1.5-inch cubes and pat dry with paper towels.

Whisk peanut butter, soy sauce, lime juice, sambal, and brown sugar with 2 tbsp water until pourable.

Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add chicken, don't stir for 2 minutes until edges brown. Toss, cook 2 more minutes until no pink remains.

Pour sauce over chicken and stir to coat. Simmer 2 minutes until sauce thickens and coats each piece.
