Ingredients

  • ½ lb steak (sirloin or ribeye)
  • ½ medium onion, sliced thin
  • 1.5 cups pepper jack cheese, shredded
  • 4 whole flour tortillas (8-inch)

Instructions

    Pat steak dry, season with salt and pepper, then sear in a skillet over medium-high until edges brown, 90 seconds per side.

    Remove steak to a cutting board, slice thin, then sauté the onion in the same skillet until soft and golden, ~5 minutes.

    Place a tortilla in the skillet, layer with cheese, sliced steak, and caramelized onions, then top with another tortilla.

    Cook until the bottom tortilla is crispy and golden, ~2 minutes, then flip and cook the other side until cheese melts.
