Ingredients
- 1.5 cups fresh squash blossoms, cleaned and roughly chopped
- 1 cup oaxaca cheese or fresh mozzarella, torn into pieces
- 4 pieces flour tortillas (6-inch or 8-inch)
- 1 bag (10-12 oz) frozen french fries
- 2 tbsp neutral cooking oil

Heat oil in a large skillet over medium until it shimmers, about 1 minute.

Place a tortilla on a cutting board. Scatter half the squash blossoms and cheese on one half, then fold in half. Repeat with a second tortilla.

Slide both quesadillas into the skillet. Cook 2 minutes until the bottom is golden and crispy, then flip and cook another 1–2 minutes until the second side crisps and cheese melts.

While quesadillas cook, bake fries in an air fryer at 400°F for 10 minutes, or pan-fry them in a second skillet until golden.

Transfer quesadillas to a plate. Season with salt and pepper. Serve hot alongside the fries.
