Ingredients
- 1 lb potato gnocchi (fresh or frozen)
- ¾ cup heavy cream
- ¼ cup vodka
- 2 tbsp tomato paste
- ½ tsp red pepper flakes
- ½ cup parmesan cheese, grated

Bring a large pot of salted water to a boil over high heat, ~8 minutes.

Add gnocchi and stir gently. Cook until they float, then for 1 minute more, ~3 minutes total.

Drain gnocchi, reserving 0.5 cup pasta water. Return pot to medium heat.

Add cream, vodka, tomato paste, and red pepper flakes. Stir until smooth.

Simmer 2 minutes until sauce thickens slightly and smells of reduced alcohol.

Return gnocchi to pot. Fold gently to coat. Add pasta water 1 tbsp at a time if too thick.
