Ingredients

  • 1 lb (fresh or frozen) gnocchi
  • 4 oz gorgonzola or other blue cheese, crumbled
  • ¾ cup heavy cream
  • 2 tbsp butter
  • 6 leaves fresh sage leaves (or parsley)

Instructions

    Bring a large pot of salted water to a boil. Add gnocchi and cook until they float, then 1 minute more, ~4 minutes total.

    Meanwhile, heat butter and cream in a large skillet over medium until simmering, ~2 minutes.

    Add crumbled gorgonzola to the cream and stir until melted and smooth, ~1 minute.

    Drain gnocchi and add directly to the cheese sauce. Toss gently to coat, 30 seconds.

    Tear sage leaves and scatter over top. Season with salt and pepper to taste.
