Ingredients
- 4 oz dried glass noodles (rice vermicelli)
- ½ lb large shrimp, peeled and deveined
- 3 tbsp fresh lime juice
- 2 tbsp fish sauce
- 3 cloves garlic, minced
- 1 tsp Thai chili flakes or fresh red chili, thinly sliced
- ½ cup fresh cilantro and green onion, chopped

Boil a large pot of water. Add glass noodles and cook until barely tender, 4-5 minutes. Drain and set aside.

Heat 1 tbsp oil in the same pot over medium-high heat. Add shrimp and cook, stirring, until pink and cooked through, 3-4 minutes.

Add minced garlic to the pot and cook for 30 seconds until fragrant. Pour in lime juice and fish sauce, stirring to combine.

Return noodles to the pot. Toss everything together for 1 minute until coated and warm throughout.

Transfer to a bowl. Top with chili flakes and half the cilantro-green onion mix. Taste and adjust lime juice or fish sauce.
