Ingredients

  • 4 oz dried glass noodles (rice vermicelli)
  • ½ lb large shrimp, peeled and deveined
  • 3 tbsp fresh lime juice
  • 2 tbsp fish sauce
  • 3 cloves garlic, minced
  • 1 tsp Thai chili flakes or fresh red chili, thinly sliced
  • ½ cup fresh cilantro and green onion, chopped

Instructions

  1. 1

Boil a large pot of water. Add glass noodles and cook until barely tender, 4-5 minutes. Drain and set aside.

  2. 2

Heat 1 tbsp oil in the same pot over medium-high heat. Add shrimp and cook, stirring, until pink and cooked through, 3-4 minutes.

  3. 3

Add minced garlic to the pot and cook for 30 seconds until fragrant. Pour in lime juice and fish sauce, stirring to combine.

  4. 4

Return noodles to the pot. Toss everything together for 1 minute until coated and warm throughout.

  5. 5

Transfer to a bowl. Top with chili flakes and half the cilantro-green onion mix. Taste and adjust lime juice or fish sauce.

  6. 6

Serve hot or warm, garnished with remaining fresh herbs.
