Ingredients

  • 6 oz spaghetti
  • 8 oz large shrimp, peeled and deveined
  • 8 oz mussels, cleaned and debearded
  • 4 cloves garlic cloves, minced
  • ½ cup dry white wine
  • 1 whole red chili pepper, sliced thin
  • 1 whole lemon (zested and juiced)
  • ¼ cup fresh cilantro, chopped

Instructions

    Preheat oven to 425°F. Boil spaghetti in salted water until 2 minutes shy of al dente, then drain.

    Tear two large sheets of parchment paper. Divide pasta between them, then top with shrimp, mussels, and garlic.

    Drizzle each packet with 3 tbsp wine, 1 tbsp olive oil, and a squeeze of lemon juice. Top with chili slices.

    Fold parchment edges to seal tight. Place on a sheet pan and bake 10 minutes until packets puff and steam.

    Carefully unfold packets (watch for steam). Scatter cilantro and lemon zest over top.
