Spicy Gochujang Chicken

Ingredients

  • 4 whole (about 1.5 lbs) chicken thighs, skin-on, boneless
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 whole green onion, sliced (white and light green parts)

Instructions

    Preheat oven to 425°F. Pat chicken thighs dry and arrange skin-side up on a sheet pan.

    Whisk gochujang, honey, soy sauce, and sesame oil in a small bowl until smooth.

    Brush the gochujang mixture all over the chicken, coating skin and underside generously.

    Roast for 12–14 minutes until skin crisps and an instant-read thermometer reads 165°F at the thickest part.

    Scatter green onion over top. Serve hot with rice or steamed vegetables.
