Ingredients

  • ½ lb ground beef
  • ¼ medium onion, minced
  • 1.5 tsp cumin, coriander, and paprika
  • 1.5 cups cherry tomatoes
  • 2 cups fresh arugula
  • 1 whole fresh red chili, sliced

Instructions

    Mix ground beef, minced onion, cumin, coriander, paprika, 0.5 tsp salt, and black pepper in a bowl.

    Divide beef mixture into 4 portions and mold each tightly around a metal skewer, forming a 5-inch log.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear kofta 3-4 minutes per side without moving until deeply browned and cooked through. Transfer to a plate.

    Add cherry tomatoes to the same skillet and cook 2 minutes, shaking the pan, until they blister and soften.

    Toss arugula with warm tomatoes off heat, squeeze lemon juice, pinch of salt. Serve alongside kofta and sliced chili.
