Ingredients

  • 1 lb ground beef (80/20)
  • ¼ cup onion, finely minced
  • ¼ cup fresh parsley, chopped
  • 1.5 tsp ground cumin
  • 1 tsp ground coriander
  • ½ cup Greek yogurt
  • 2 cloves garlic, minced

Instructions

    Combine ground beef, minced onion, parsley, cumin, and coriander in a bowl. Add salt and pepper. Mix until just combined—don't overwork.

    Divide into 4 portions. Mold each onto a metal skewer, pressing firmly into a long oval. Pat dry with paper towels.

    Heat oil in a large skillet over medium-high until it shimmers, about 60 seconds. Place koftas in the pan without moving them.

    Sear 4 minutes per side until golden brown and cooked through (internal temp 160°F). Transfer to a plate.

    Stir garlic into yogurt with a pinch of salt. Serve koftas alongside the garlic yogurt, warm pita, and lemon wedges.
