Ingredients

- ¼ cup onion, finely minced
- ¼ cup fresh parsley, chopped
- 1.5 tsp ground cumin
- 1 tsp ground coriander
- ½ cup Greek yogurt
- 2 cloves garlic, minced

Combine ground beef, minced onion, parsley, cumin, and coriander in a bowl. Add salt and pepper. Mix until just combined—don't overwork.

Divide into 4 portions. Mold each onto a metal skewer, pressing firmly into a long oval. Pat dry with paper towels.

Heat oil in a large skillet over medium-high until it shimmers, about 60 seconds. Place koftas in the pan without moving them.
