Ingredients

  • 1.5 lb beef sirloin or ribeye, cut into 1.5-inch cubes
  • ½ cup jarred aji verde sauce
  • 1 tsp ground cumin
  • 2 tbsp red wine vinegar
  • 2 whole limes (for serving)
  • 1 medium red onion, cut into 1-inch chunks
  • ¼ cup fresh cilantro or parsley, chopped

Instructions

    Toss beef cubes with aji verde, cumin, and vinegar in a bowl until coated.

    Thread beef and onion chunks alternately onto four metal skewers, dividing evenly.

    Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Sear skewers 2–3 minutes per side without moving, until edges are caramelized and charred.

    Transfer to a plate and squeeze lime juice over the top.

    Scatter cilantro over skewers and serve immediately with lime wedges.
