Ingredients

  • 2 blocks instant ramyeon noodle blocks
  • 6 oz spam, cut into 8 thin slices
  • 6 oz bok choy, halved lengthwise
  • 1 medium carrots, sliced thin into coins
  • 3 cloves garlic, minced
  • ½ tsp gochugaru (Korean chili flakes)
  • 2 whole eggs
  • 1 tbsp sesame oil

Instructions

  1. 1

Bring 5 cups water to a boil in a large pot over high heat.

  2. 2

Add ramyeon blocks and stir to separate. Cook until just tender, about 3 minutes.

  3. 3

While noodles cook, sear spam slices in a skillet over medium-high for 2 minutes per side until edges crisp and char.

  4. 4

Add bok choy, carrots, garlic, and gochugaru to the pot with noodles. Stir well and cook 2 minutes.

  5. 5

Crack both eggs into the pot. Turn heat to medium and cook until whites set but yolks still jiggle, about 3 minutes.

  6. 6

Divide noodles and broth into bowls. Top each with spam slices, drizzle sesame oil, and serve immediately.
