Ingredients

  • 6 oz pork belly, sliced thin
  • 2 packages ramyeon (Korean instant noodles)
  • 1.5 tbsp gochujang (Korean red chili paste)
  • 5 cups water
  • ¾ cup kimchi, roughly chopped
  • 2 whole eggs
  • 2 tbsp scallions, sliced thin

Instructions

    Heat a large pot over medium-high. Cook pork belly until edges crisp, about 4 minutes, stirring often.

    Add water and gochujang, stirring until paste dissolves. Bring to a boil.

    Break noodles into pot. Stir and simmer 2 minutes, then add kimchi and noodle seasoning packets.

    Crack eggs into the simmering broth. Cook until whites set but yolks stay runny, about 2 minutes.

    Divide between bowls. Top with scallions and extra crispy pork from the bottom.
