Ingredients

  • 8 oz spaghetti
  • ½ lb ground beef
  • 1 jar (24 oz) marinara sauce
  • 2 cups arugula, loosely packed
  • 0 to taste salt and pepper

Instructions

    Bring a large pot of salted water to a rolling boil over high heat.

    Cook ground beef in the boiling water, breaking it apart with a spoon until no pink remains, about 4 minutes.

    Add spaghetti to the same pot and stir well to separate strands.

    Cook until pasta is al dente, stirring occasionally, about 8 minutes.

    Drain pasta and beef, reserving 1 cup pasta water, then return to pot.

    Stir in marinara sauce and 0.5 cup pasta water, simmer 1 minute, then toss in arugula until wilted.
